Let yourself be surprised by this recipe for a Sicilian-style fennel salad
Ingredients for 4 people:
1 small chili pepper
extra-virgin olive oil
Wash fennels in cold water, discard the outer leaves and cut off the green stalks on top.
Cut the fennels in half, slice them finely and set them aside.
Peel the oranges using a potato peeler or a sharp knife, separate them into slices and peel each slice to expose the pulp.
Cut the chili pepper into fine slices and add it to the orange wedges and olives.
Mix well and place on top of the sliced fennels. Season to taste with salt and extra-virgin olive oil and serve.
